How Does a VPN Work?
A VPN connection is used to route your data through an encrypted tunnel to the VPN server. This prevents anything (or anyone) connected to your router to see your web traffic. From the VPN server, your traffic then merges onto the public internet. At this point your data is no longer encrypted unless it's directed to a site that uses HTTPS.
Since your traffic is coming from the VPN server versus your actual work station or server, your IP address is essentially hidden from outsiders. Any tracing of the IP address would result in seeing the IP of the VPN server instead of your location. Any non-HTTPS connections won't anonymize the data, but it will hide its origin.
